Red or Green?

No kidding, that’s our official state question, and when you visit Albuquerque you’ll have to answer it every day. I always have a hard time deciding between red and green chile. I love a whole, freshly roasted green chile draped over a hamburger. I adore chopped green chile mixed with hash browns, cheese and bacon in a breakfast burrito. But with tortillas and a fried egg in huevos rancheros? It’s gotta be red. Generally speaking, I like chicken enchiladas with green chile and beef with red chile. But feel free to mix it up a little! If you want to try both red and green chile, just say you want it “Christmas.”
