Las Posadas

This December, Los Poblanos Inn & Organic Farm will be hosting Las Posadas, a traditional holiday event celebrated in Mexico for centuries. Las Posadas is still practiced in New Mexico today, and now guests of Los Poblanos can participate in the event, which will include a traditional New Mexican feast featuring fresh organic ingredients from the farm and our local food shed. Beginning with a leisurely candlelit stroll around the farm, following luminaria lit pathways, through the Historic Inn followed by a traditional New Mexican feast in the historic ballroom, featuring unique holiday foods from New Mexico. This special holiday meal will star Chef Jonathan's recipe for bolitos, a rare and long forgotten dish that only our great grandmothers remember how to prepare, as well as delicious posole and tamales, all prepared according to age-old traditions.
