is very vegetarian-friendly, with a variety of restaurants catering
specifically to vegetarians. In fact, most of our restaurants' menus
boast at least one signature meatless entrée. Be aware that some
traditional New Mexican and Native American restaurants prepare their
chile and/or beans with meat, poultry or pork products, so be sure to
ask about the preparation when ordering. Other traditional New Mexican
foods that may be prepared with meat include rice, posole, soups, stews
and tamales. When ordering Indian fry bread be sure to ask if it is
fried in vegetable shortening or lard. Traditional Indian oven bread is
made with lard as are biscochitos, our rich, anise-flavored state cookie.
Many New Mexican restaurants offer vegetarian preparations just ask when ordering or call ahead to check.
